What would be a good option for a 27-32" monitor? I need to get 3 such monitors [most likely 32" size] for work from home (apartment). I am open to various ideas. Should I get a larger desk or 2 smaller desks & put them together? I want to spend under $200 for the desks.

These are extremely small for a monitor, let alone three.
The depth for the first three desks is 15.7". The monitor itself would barely fit. Imagine the desks people put TVs on. These are like that but also much narrower, so you couldn't even put a TV on.
The last one is 20". Still way too small for monitor use.
I'd suggest to go with a powered standing desk if you can. Good ones can be found around $200 and you can use a monitor arm to get two monitors. For three, weight might be a concern.

I thought the powered standing desks cost several hundred more. I saw one by autonomous for $499. I have seen the Insignia one go on sale for $200. Also, I looked up the weight of 32" monitors. It seems a 100 pounds capacity desk would be sufficient to hold 3 monitors. Ideally, I would like to have all 3 vertical using monitor arms. I don't want to get cheap junk but also, don't want to break the bank. Do you have any suggestions?

Probably you need consider 7 feet table top for 3 32 inch monitors, with 24/30 (better) inch depth. Currently I have two 32 inch monitors and enough space left, mine is a non solid wood table top from office depot. Or the husky one from homedepot. But you do need to find a budget table frame.

I am in a 1 bedroom apartment. The best I can probably do is under 70" table top width. 24-30" depth might be doable though. I guess I really need to think it over how to make this work. Any ideas for a budget table frame?
I just learnt about the Tresanti sit-stand desk from Costco for $249. It's only 47" wide though.

For a seven foot table, get a countertop or table top from Home Depot or IKEA. Legs can be a couple of the low drawer/cabinets from IKEA, eg, You might want to remove the casters, especially on the taller units.

That's an interesting idea. I currently work on a 29" height desk. So, 29-30" height works for me. No writing on paper. 24" depth should work well.

I actually own this setup - an IKEA desk top with two IKEA ALEX file cabinets. I think it cost around $200 total. The desktop got scratched up pretty quickly and looked horrible within a year. I ended up putting shelf liner paper over it. Personally I would recommend a desk on sale from Target over an IKEA desk.

What should be the weight capacity I should looking for to mount 3 monitors vertically? My initial thought is 100 pounds would be enough.
Thinking out loud, I could get two of those $60.50 desks listed above & place them one in front of the other, to create a 30" depth. The question though is if that 1 desk can hold 3 32" vertically mounted monitors.
I also looked up on reddit. One of the suggestions was to get a dining table. lol.
Another option was to go with some thing from Ikea's Bekant/ Galant series.

So maybe go for the ALEX cabinets; factor in the tabletop thickness and you'll be near your ideal height. There are these little nub things, forgot the name, that you can use between the tabletop and the cabinet tops to raise it another inch or so. Or just get a pack of hockey pucks, probably cheaper and more durable.

A real countertop or work surface from Home Depot would definitely be more durable than an IKEA desktop, and I'm planning on that for my next desk. But fwiw, I used this https://www.amazon.com/gp/product/B076P4K7N1/ from the start on a desk similar to IKEA, and haven't had a wear problem. It's essentially a gigantic mousepad. My keyboard and mouse sit on top of it, and my monitors are right behind it.
Difference probably is that I'm not really moving anything across the rest of the desk surface at all. Once the screens etc are positioned, there's nothing to scratch. If one intends to actually use the surface, IKEA's not the best option.

The tresanti has glass top, so you cannot use any monitor arm (maybe you can, but definitely not 3 32 inch monitors).
I have one (old version) but should be of similar size, hold two 27 monitors while one is vertical.
